Yummy Chocolate Cupcakes Drizzled With Caramel

These yummy chocolate caramel cupcake bites are a family favorite. I make them every year for get togethers, holidays and birthdays and there always a huge hit!

What you will need!

  • 1 cup of sugar
  • 3/4th cup + 2 tbsp flower
  • 1/2 cup unsweetened coco powder
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • Half a tsp of salt
  • Half-cup + 2 tbsp milk, separated
  • 1/4 cup veggie oil
  • 1 whole egg
  • Half-cup boiling water
  • 7 oz melted caramel
  • 1 cup melted chocolate chips
  • Sprinkles

Directions

  • Preheat oven to 350°. Line 30 mini cupcake tins with liners.
  • Mix sugar, cocoa, baking soda and powder, salt and flower in bowl. Mix half cup of milk, egg and oil in large bowl until blended. Add sugar mixture and mix for 5 min. Add boiling water and mix for another 5 min. Then add to lined cups.
  • While those are cooking, mix caramel and other 2 TBSP of milk in bowl. Microwave for 2 min. Drizzle over semi cooked cupcakes. Continue baking untill toothpick comes out clean.
  • Cool cupcakes completely and drizzle more caramel and chocolate on cupcakes and add sprinkles. Serve and enjoy! They are that easy!

I have always loved baking. At first it started out with simple box cake mixes and premade cookie dough. Eventually though with many hours in the kitchen and a lot of practice I now make home made, from scratch, cookies, cakes, bread and more! It was definitely a tough time getting from where I started to where I am now. One of the first box cake mixes I ever made, for example, I got all the ingredients ready, reread the back of the box to make sure I had everything and knew what I was doing. So, I dump the mix in to my bowl. Add the oil, water and eggs and start mixing. When I thought I had mixed it enough I greased my pan, poured the batter in and put it in the oven. When the timer went off I checked the cake and... PERFECT! The toothpick came out clean! So I frosted the cake and decorated it (the best a 10-year-old can) and served my mom and dad a slice. We were all sitting down enjoying the cake when. My dad starts laughing and says, "JADE! You made a scrambled egg cake!" I was confused at what he was saying so I went over and looked at his slice and to my surprise... there was scrambled egg in the cake! Turned out I didn't mix the cake enough. It was so funny that we still joke about it to this very day, 11 years later.

I have had my share of funny failures in the kitchen but also triumphant victories. My freshman year for example. I was in Foods Class 1. We did our basic introduction and got split up in to our cooking teams we would be in for the rest of the semester. And of course just my luck I'm put with the three kids in the class that think they knew everything. So they put me on dishes... And my teacher would not help me. She told me I had to discuss it with the group if I didn't like where they put me... So that whole semester I did dishes instead of cooking. Finally the end of the semester was here! And the last day of class we were going to have a party where everyone in class made and brought a dish. I was so excited! Finally my turn to show what I could do! I made banana crumble muffins. They turned out PERFECT! The day of the party I brought my muffins to class and everyone loved them! I got so many compliments from the teacher, students and even got an apology from my whole team it was one of the best most victorious days of my high school career!

Of course I can't give myself all the credit! My mom was and still is my biggest supporter! She's always had my back when it comes to anything. Especially my cooking. So a big thank you to my mom! For always being there for me! I hope to one day soon save enough money to open a bakery of my own and do what I love every day!
