Panda Express Copycat

A couple months ago, I started really getting into Chinese food, like a minor obsession... I literally make my boyfriend take me to Chinese restaurants on every date. He's the one that gave me this noodle craze...

If you have a "noodle craze" like me… you NEED to try out this recipe.

I've had a lot of noodles lately but nothing compares to what Panda Express makes. Their noodles have such a unique taste that I crave probably three times a week.

The closest Panda Express near me is a two hour drive… I am OBSESSED…. I mean obsessed with it. Anytime I'm on a trip, I make whoever I'm with stop, even if they don't want Panda Express... They need to stop for me, or maybe those days when I take those two hours out of my day to satisfy my noodle needs, it NEEDS to be from Panda!

When I found this recipe, I probably passed out. As you can probably tell.... I LOVE noodles, and no noodle compares to Panda Express.

Have you guys ever tried to make your own mix of something and just hope that it works out? I do that so many times with recipes and they never work out... they also taste awful. But THIS is something you will not regret. I've made this recipe so many times, I could probably make it without any instructions.

I've found that this recipe is perfect for a family meal. My mom doesn't like noodles very much but as for the rest of my family, they can never get enough of these copycat noodles.

I've also made these noodles just for myself—like I said, kinda obsessed—so most of the time I find myself splitting the recipe in half and eating the two portions myself. Noodles are like a comfort food for me, especially from Panda Express. So when the cold air starts to blow around outside, I make these noodles, I put them in a to go container (no judgement), grab my favorite pair of chopsticks, and watch many seasons of my favorite TV shows.

Like I've said before, noodles are definitely a comfort food for me. They're probably a love language… Tell me you've got noodles or you want to go somewhere and get them, I am willing to love you for the rest of my life. Just talking about them makes me so hungry, I can seriously smell them. I might have to make a run to Panda Express...

So, without any further babbling… here it is.

This recipe take about 20 minutes.

It serves 4 (or one… not judging).

Ingredients:

Produce:

  • 2 cup cabbage
  • 2 stalks celery
  • 3 gloves garlic
  • 2 tps ginger
  • 1 onion

Condiments

  • 1/4 cup soy sauce (reduced sodium)
  • Pasta
  • 2 (5.6 oz) packages yaki-soba (refrigerated)

Baking & Spices

  • 1 TBSP brown sugar
  • 1/4 tsp white pepper

Oils & Vinegar

  • 2 TBSP olive oil

Directions:

  1. In a small bowl whisk together soy sauce, garlic, brown sugar, ginger, white pepper. SET ASIDE.
  2. In a large pot of boiling water, add yaki-soba noodles until loosened (about 1-2 minutes), and DRAIN WELL.
  3. Heat olive oil in large skillet over medium-high. Add onion, celery, and cook, stirring often until tender (about 3-4 minutes). Stir in cabbage until heated through (about 1 minute).
  4. Stir in noodles and soy sauce mixture and stir until well combined.
  5. Serve immediately.

I hope you enjoy this as much as I do! It definitely beats those long drives and waits for my Panda Express noodles.
