I almost felt guilty about eating two bowls....almost 😋

I often find myself craving specific dishes while I’m doing the most random things or when I see a Non Vegan dish I want to recreate. I decided this week I wanted to eat all Plant-Based and no additives or “extra” stuff. So I thought, what can I make that’s junk food, but healthy and won’t require any outside items other than the veggies I already bought?

BAM! 💥 Plant-Based Nachos. Since they were Plant-Based I couldn’t use pre-made chips so I figured baked potato wedges would cut it. I wanted SAVORY, SPICY and FLAVOR PACKED nachos. The sauce is Plant-Based, so delicious and “cheesy” you wouldn’t even realize it was made from plants. These Nachos are the type of food you make when Super Bowl season rolls around, a fun girls night or you just want something fun and flavorful for the fam. I’m super stoked to share this recipe, and I HIGHLY recommend this for everyone.

Vegan or Non-Vegan 👍🏽

Baked Wedges:

6 Yellow Potatoes cut into wedges. Place them in a bowl and drizzle with Olive oil. Season with Smoked Paprika, Sea Salt, Pepper and whatever else you want. I added some Chicken salt in “Red Pepper” from Jada Spices (Vegan friendly) which has lately been my go to favorite go to spice. It adds a nice kick to your meals without being too spicy. Pop them in the oven at 450° for 30-35 min until a slightly browned (not burned) on the outside.

“Cheesy” Sauce:

  • 1 1/2 cups chopped carrots (about 2 large carrots)
  • 1 whole Yellow onion
  • 2 cups chopped gold potatoes (about 2 medium potatoes)
  • 1/2 cup raw cashew pieces
  • 1/4-1/2 cup nutritional yeast (1/2 cup of you want a cheesier taste
  • 1 tablespoon garlic salt
  • 1 1/2 tablespoon onion powder
  • 2 teaspoons Dijon mustard (I used regular mustard because that’s all I had on hand)
  • 1/4 teaspoon ground turmeric
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons sea salt, plus more to taste if needed
  • 1/2 Tsp of Smoked paprika
  • A decent sprinkle of Chicken Salt “Turmeric Salt” from Jada Spices (no I’m not endorsed, I just really love their spices!)

Boil two cups of water with the chopped carrots, onion and potato. Cover with lid until soft. Once soft, add everything including the water to a blender. Add in your cashews, Nutritional Yeast and all your add ins and spices. Blend until smooth, creamy and cheesy. If the mixture is too thick, you may add more water, but do so little at a time so the mixture does not become too runny.

Toppings: Black Beans, Sautéed Veggies of your choice; I used Bell Peppers, Onion and Mushrooms. Guacamole 😙😙😙. Guacamole was made with Avocados (duh!), red onion, tomatoes, lemon and sea salt.

Garnish: Serrano Peppers, Green Onions and Cilantro
