Cheap Chicken Pot Pie

I, like many other Americans, work my 40 hours a week. The daily grind, or nightly grind in my case. I work overnights. I often find myself with too many bills and not as much money as I would like. I used to eat a lot of junk. My husband and I were going out to eat about four times a week or more. Not only was it bad for my body, it was also bad for my wallet. Recently I have been cooking at home most every evening before I head in to work and I have found that a lot of meals that I enjoy can be made for around 10$ and feed four-ish people depending on the people's appetites. My recipes are usually consumed by myself and several grown men with big appetites so you can generally assume these recipes will feed four very hungry people. So for my first post I will be covering Cheap Chicken Pot Pie. I remember my mother making something similar to this recipe whenever one of us kids were feeling down in the dumps. This meal at its core is comfort food. It's hearty and filling and fun to eat. This recipe will make a great addition to your meal arsenal. Sure to be a crowd-pleaser. I usually shop at Walmart because I live in a small town and there are not many options for grocery stores.

Ingredients List:

  • 2 boxes Bisquick buttermilk biscuit mix - 49 cents/box
  • 1 bag fresh to frozen peas - 88 cents/bag
  • 3-4 peeled and sliced carrots 99 cents/lb
  • 14-20 green beans fresh chopped 1.44/lb
  • 1lb chicken (I use chicken thighs because they are cheaper than breast meat. They come with a little more work because you have to pick the meat off of the bones.) 2.40/lb
  • 1 can cream of chicken soup 89 cents/can
  • 1 onion diced 50 cents/lb

Directions:

Preheat oven to 400.

Cook chicken until meat falls right off bones and shred. (Can be done ahead of time.)

Mix chicken, cream of chicken and veggies in a bowl together.

Grease an 8x8 or 9x9 casserole dish with vegetable oil or PAM cooking spray.

Add in the cream of chicken soup conglomerate.

Make level by spreading around with a plastic spatula or wooden spoon.

Mix together biscuit mix. Only calls for water. The dough should be thick. Thin watery dough will not do what you need it to for this recipe.

Drop biscuit mix on top of soup mixture until it covers most of the top with a spoon. You want even sized biscuit parts so you should use a spoon thats medium sized to measure out your biscuit drops.

Bake at 400 for 30 minutes. When it is done you will be able to see the brown crispy top and your kitchen will smell amazing.

Serve warm and enjoy. This is definitely a bowl food. If you serve this on plates it will make a mess. Bowls will contain all the creamy goodness.

The guys in my house loved this. We had no leftovers. They scarfed it down and came looking for seconds. Who says good food has to cost an arm and a leg? My shopping bill for this particular meal comes to $7.20 USD as the state I live in does not have tax on food.
