St. Patrick's Day is just around the corner, maybe you planned the meals, and the parties, but what about the dessert? Or maybe you don't do parties but are looking for a fun recipe to try for fun on St. Paddy's day. What is a good dessert to make? Look no further, I have here a wonderful dessert that is delicious, easy, and lot's of fun.

Creme De menthe cake, a delectable delight of sweet, rich chocolate and cool mint tumbling together into a perfect harmony that is so divine, and heavenly, you will be coming in for seconds. This family recipe has been a hit in our family for years. It's simple, quick, easy, and quite scrumptious. It is sure to be an instant favorite with your own family, and is a sure win for parties and social gatherings. The cake is large enough to serve both at family and social gatherings.

With our busy schedules, it is hard to find time to bake, much less whip up a festive dessert, especially on a holiday. This easy cake has been a top favorite St. Patrick's day dessert for our family for over twenty years. The green cake is a delight to all and lots of fun, add the chocolate fudge and minty whipped topping, this cake will be fondly remembered for years to come. The perfect cake dessert for St. Patrick's Day.

You will only need four main ingredients, and in under an hour you will have a cake that will make others 'green' with envy, and begging for the recipe. It's fun and easy for anyone to make.

What You Will Need for Ingredients:

  • One White cake mix—including the ingredients that the cake mix —Oil, eggs, and water—The cake mix will be an easy find at any store, though if you are feeling extra creative, you can also make the cake from scratch. A simple recipe for a white cake will follow. Though a cake mix is easier and faster.
  • Three tablespoons and three teaspoons of Creme De Mint—You will be able to find this at your local grocery store. If not, you can try a liquor store. You don't need much, a small bottle will do just fine.
  • Fudge Sauce—This can be easily found at any store. It is better to have the fudge sauce in a jar, rather than a squeeze bottle. You will be able to scoop out the fudge and place it in a bowl to spread easier with a jar. Though in a pinch, a squeeze bottle is fine. you are also welcome to make your own fudge sauce if desired.
  • 12 oz of Cool Whip, ready to use. Or you can use whipping cream.

For the Directions:

  1. Make and bake the white cake as directed, including adding the three tablespoons of Creme De Mint in the batter. You will want to use a 9x13 pan for the best results in this dessert.
  2. When the cake is done, you want the cake to be cool enough to handle before doing the rest. A warm cake can help soften the fudge sauce and help it smooth evenly.
  3. You will want to spread the fudge sauce all over the top of the cake generously, nice and smooth.
  4. Add the three teaspoons of Creme De Mint to the cool whip, then spread the cool whip evenly over the top. For extra garnish you can add crushed Andes candy sprinkled on top.
  5. When you are finished, simply refrigerate your cake until you are ready to serve it.

If you rather make a white cake from scratch, but do not have a recipe for one on hand, here is a simple recipe our family uses.

For Ingredients, You Will Need:

  • 1 1/2 Cups of flour
  • 1 Egg
  • 1 Cup of sugar
  • 1/2 Teaspoon vanilla
  • 1/2 Tablespoon of baking powder
  • 3/4 Cup of milk.
  • 1/4 Cup of butter, softened.

For the Directions:

  1. In a large bowl, mix the sugar and butter together, and add the egg. Mix until the egg is nice and fluffy. Then you will add the vanilla.
  2. Once mixed, you will add the flour, and baking powder into your egg mixture. Carefully fold the batter, as you don't want to over-mix. Fold until everything is blended together. At this point, add the Creme De Menthe and blend it in.
  3. You now can pour the cake batter into a greased 9x13 pan.
  4. Bake at 375, for at least 25-30 minutes. You will know when your cake is done when you stick a toothpick in the cake, and it comes out clean.

Once the cake is cool, you can go on and continue with making your Creme De menthe dessert.
