Does anyone else get woken up in the middle of the night with a craving for tacos? Just me? Alright... but these mini taco cups would be PERFECT to satisfy those cravings. Now when its not three in the morning, and you have a couple friends coming over and need a FAST & SIMPLE appetizer, these need to be your go to!

alright. so i know I've said it before. I'm obsessed with a lot of things ( I like food okay?). But tacos, who doesn't love a good taco? When Sunday comes around, my family practically lives at this Mexican place. I can't even count the times where my cousins and I are out and get cravings for some good old Mexican food. Want to talk about commitment? I was once was a taco for halloween.

now ive made this recipe many times in a couple different ways, I have found that the "taco cup" works the best as kind of like a snack or as most would say, an appetizer. People like food that is stuffed with a lot of things, and cute. not to mention easy to eat.

its a simple grab and go, and you can eat it while you walking, or sitting. you can hold it in one hand while having a drink in the other with absolutely no problem.

Now the recipe calls for one pack of taco seasoning, me personally just being the kind of person I am, I love to make up my own seasonings, maybe ill put one of my taco season mixes on here one day.

The recipe also calls for wonton wrappers... which yes, makes things much easy, but I you know me. You know if I can make it myself, I'm making it myself. for the first time I tried to make homemade tacos. like actual big tacos shells for dinner one night. It took forever, just because there are a lot of steps and I make WAY too many for four people. But I actually caught my mom sneaking down stairs in the night, just to grab one of those tortilla shells. Maybe one day I'll put the recipe on here, but if your like me and enjoy making things from scratch, I'd definitely recommend making taco shells and just shaping them into the squares you would need for this recipe. If you do it that way, you probably only need to put one shell down and not having to add another layer of everything. Wonton wrappers are pretty thin so adding that extra layer isn't completely necessary, but I definitely recommend that you do that layering that the recipe calls for.

Serves 12

Ingredients:

Meat

1lb ground beef

Produce

1 (10 oz) can diced tomatoes

Dairy

1 1/2 cups cheddar cheese (sharp)

Baked goods

24 wonton wrappers

Baking and Spices

1 pack taco seasoning

Directions:

Preheat oven to 375 degrees, Generously coat a standard size muffin tin with cooking spray.

Cook beef and combined taco seasoning, and tomatoes in a bowl.

Line each cup of the muffin tin with a wonton wrapper. Add a spoonful of the mixture into each wrapper. Top with 1 TBSP of cheese.

Press down and add another wonton wrapper and another layer of meat and cheese.

Bake at 375 for 11-13 minutes or until the edges are golden brown.

Serve immediately.

OPTIONAL: Finish off each taco cup with a dollop of sour cream. You could even add salsa, white cheese queso, or a dollop guacamole
