Six Summer Smoothie Recipes

I have six Summer Smoothie recipes for you. My smoothies use little or no ice. They are all gluten free, dairy free, soy free and egg free. I have a few vegetable smoothies that are very tasty, and I included my favorite no fruit smoothie. There are actually two no fruit smoothies below to choose from.

A combination of frozen fruits and fresh fruits work best when making a smoothie, but feel free to get creative and use whatever you have. Please note that coconut milk comes in various forms. The coconut milk in the dairy case is very different from the coconut milk in a can over in the aisles.

If you are not a fan of coconut milk I want to encourage you to give these smoothies a try. I have never been a fan of coconut or coconut milk, but when used with the other ingredients, it is the perfect product to make these great tasting smoothies.

1. Chocolate Banana

Gluten Free | Dairy Free | Soy Free | Nightshade Free | Egg Free

  • One thinly sliced banana that has been frozen. (Very thin!)
  • 1 can unsweetened coconut milk, chilled
  • ¼ cup powdered sugar
  • 1 tablespoon cocoa powder
  • Almond milk (about a cup)
  • 1 teaspoon vanilla extract or vanilla flavoring

Place all ingredients into the blender and blend until smooth and creamy.

For some reason a very, very thinly sliced frozen banana will blend up to the texture of ice cream. Trust me!

2. Iced Coffee Smoothie

This Recipe Is: Gluten Free | Dairy Free | Soy Free | Nightshade Free | Egg Free and No Fruit

  • 1 cup black coffee, room temperature or chilled
  • 1 can unsweetened coconut milk (can)
  • ¼ cup sugar
  • Ice, or you can freeze the milk the night before and use that instead of ice.
  • 1 teaspoon vanilla

Place all ingredients in the blender and pulse until blended well and creamy smooth.

3. Peach Smoothie

This Recipe Is: Gluten Free | Dairy Free | Nightshade Free | Soy Free | Egg Free

  • 1 cup frozen peaches
  • 1 cup Almond Milk
  • 1 can unsweetened Coconut milk
  • ¼ cup sugar or honey
  • 1 teaspoon vanilla

Blend all of your ingredients in your blender. I would start with half the milk and add more if it is too thick.

4. Vanilla Cinnamon Smoothie (No Fruit)

This Recipe Is: Gluten Free | Dairy Free | Nightshade Free | Soy Free

  • 1 can unsweetened Coconut Milk
  • 1 teaspoon vanilla flavoring or extract
  • 4 tablespoons honey
  • 1 teaspoon cinnamon
  • ½ cup cold Almond milk if too thick.
  • 4 ice cubes

Blend until smooth and creamy. This tastes just like a Vanilla Milkshake! I promise. For those of you who do not like coconut, and are skeptical you should know that I don’t like coconut either, and I love this smoothie (milkshake)

Vegetable Smoothies

Try blending just a small part of your regular fruit smoothie with some fresh spinach leaves as an experiment sometime, and I feel sure that although it will change the color of your smoothie, it will not affect the taste. The green color can be a bit off-putting in a banana-strawberry smoothie so here are two “suppose-to-be” green smoothies. Both of these are very refreshing, hydrating to the body, and very delicious.

5. Lemon Sherbet Smoothie

This Recipe Is: Gluten Free | Dairy Free | Nightshade Free | Soy Free | Egg Free

  • 1 ripe avocado
  • 1 peeled and chopped cucumber
  • 4 tablespoons lemon juice
  • ½ cup Cold Almond Milk
  • ¼ cup sweetener
  • 4 ice cubes (or freeze your lemon juice into cubes)
  • ½ cup fresh spinach (optional)

Combine all in the blender until smooth and creamy.

6. Cucumber Pineapple Smoothie

This Recipe Is: Gluten Free | Dairy Free | Nightshade Free | Soy Free | Egg Free

  • 1 can Coconut Milk, chilled
  • ½ peeled and chopped cucumber
  • 2 cups frozen pineapple
  • ¼ cup honey
  • 4 ice cubes
  • ½ cup fresh spinach (optional)

Combine all ingredients in your blender until smooth and creamy.

The six smoothies included here are from two chapters in my latest cookbook:
