Before I get started on this amazing and easy recipe, I incorporated bits and pieces from a family recipe that has been handed down through my family for years. It's not a secret recipe; I mean it is spaghetti sauce for crying out loud, but I do like to think it is unique and full of so much flavor. This sauce is also excellent as a marinara dipping sauce, great for anything from spaghetti to ratatouille all the way over to potato casserole!
This sauce is jam-packed with wonderful flavors and aromas that are irresistible: perfect for dinner parties, if you are having family over, or any type of business meeting where you need to host a dinner and impress your boss! You can also just make this sauce for yourself as a dipping sauce for garlic bread, pita chips, or anything you can think of to dip in it.
Now, I never use exact measurements when I make this recipe here at home, so feel free to play around with it a little and adjust to how you like it.
Here is what you are going to need:
- 1 15 oz can of plain tomato sauce
- 1 28 oz can of whole tomatoes
Now, this is optional but I also like to add a 15 oz can of diced tomatoes (just love tomatoes) for me it really helps with the end texture result.
- 1 tablespoon of onion powder (you can dice up about a half of a red onion if you prefer)
- 5 cloves of chopped garlic (you don't have to use quite so much I just love my garlic)
I like to use a 2 oz package of fresh basil, finely chopped, if you prefer you can just use a couple of tablespoons of dried basil
I leave oregano out of mine, so as an option you can add oregano to taste
- 2 medium carrots chopped
- 1 teaspoon of olive oil
Add no more than a teaspoon of sugar, you don't have to add any at all if you do not want to!
Cooking time:
Before you throw anything in the pan, take those whole tomatoes and mash them in a bowl. You may get a little messy but it is OK! You don't have to keep any juice from the can itself, but everything from the tomatoes should be kept in the bowl! Add the can of diced tomatoes to this; do not drain the tomatoes if you are using them.
Saute your chopped carrots over a medium heat until they start to lightly brown, be sure to stir consistently so that they don't get burnt edges. Add your chopped garlic and reduce to a low heat. Let it saute for just a minute or two.
Take your bowl of tomatoes and add them into the saucepan and raise the heat to a medium-low. Let that simmer for about 15–20 minutes, be sure to stir occasionally! Add in your fresh basil and onion powder (if you are using oregano, go ahead and add that in too).
Allow to simmer for five more minutes, then stir in your can of plain tomato sauce and add your teaspoon of sugar in. Turn off the heat and enjoy! Ready to serve with any dish of your choosing, I recommend making few pieces of thick garlic bread to serve up with the dish you are having this sauce with; it's also great for just dipping the garlic bread in!
