My Favorite Street Tacos

No frills just good!

Back when I lived in Dallas, Texas I used to have a small garden but, all that would seem to grow in it was cilantro, green beans and small bunch onions. So, needless to say, you got what cha got!

Sometimes the simplest of things is a priceless treasure. I like to lovingly refer to street tacos as " My movie food". With lime! Oh, don't ever forget the lime! That's the best part. It's kind of like the salt around the rim of the margerita glass,am I right?

In My Hood

Best memories of summer nights.

There used to be a guy just down the street from my house that worked from morning to night making fajita tacos and a variety of all kinds of things good to eat. The smell coming from his trailer always drew a crowd! It certainly got my attention. Never used to even think about going there until one night my husband brought me some tacos from there. They were plain, white corn tortillas, doubled, seasoned fajita meat, cilantro, onion, and a wedge of lime. That was it! Nothing particularly fancy but, it was so good. I only had three of them and I was done for the night. They were so good we started going on the weekend and especially on movie night. Well, that when these became my movie food! It doesn't get any better than that. :-)

Needless to say I started making my own. They are never going to match his but they come close enough for me. You can't lose on anything with cilantro, onion, and lime. Don't even get me started on his Mexican corn, it's to die for!

Cilantro

You can never have too much!

If you have ever grown cilantro, then you know that the more you cut off of a bunch the more will grow. I used to keep a pot in my kitchen. The smell of cilantro was all over outside in my garden and in my house. It's wonderful and refreshing, sweet! When you couple the taste with lime and onion, well, there's just nothing like it. That's why it is in a lot of recipes!

The Grill

Wood fire works best.

Now, it's okay if you're using a butane or other kinds of grill and charcoal, but if you have an old barrel grill and if you have done a lot of grilling like I have, you know what I'm talking about. Instead of briquets use wood. Small stick works best. Like you would use in your fireplace, only smaller. When you build the fire, though, it must be very low and you really need to watch it closely cause you're going to need to add more twigs as you go. It may be a lot of trouble, but it's worth it. The flavor is out of this world! I promise.

The Meat

Backbone of the taco.

If you are lucky enough to live near a Mexican deli or butcher, then you can just tell them what kind of fajita meat you want because there are different kinds. However, if you don't and you go to a regular grocery the you want to get "beef flank skirt steak." It's kind of expensive and the price may vary from store to store, so depending how many tacos you want to make you need to keep that in mind. Plus, you have to be careful grilling it, because it will shrink or become tough if you cook it too long.

Tortillas

That's a good taco.

You can use whatever kind of tortillas you want: flour, yellow corn, or white corn. But the white corn bring out the flavor for me the best. The white corn has a smoother texture.

My Recipe

  • White corn tortillas 12 or more
  • Flank skirt steak
  • Cilantro—they come in bunches at the store so 2 bunches or more.
  • White onion 1 big one or bunch onions
  • Lime 3 or 4 depending how many tacos you're making.
  • Seasonings—this is kind of a personal thing. Whatever you usually use to season your meat. I just use a little black pepper.
  • Get your grill ready. Skirt steak doesn't take very long to cook so you can't just leave it depending on how hot your fire is. After you grill your steak shred it up into small slices. Take the tops off of the cilantro and slightly chop them. Not too much cause they will become mushy. Chop and dice your onion. Cut your lime into wedges. Steam your tortillas. Use 2 tortillas per taco. This also gives better control for eating and makes the taco sturdier.

Salsa

Choose the Verde.

My favorite thing to dip my tacos in is the green Salsa Verde. The red sauce is okay and so is everything else, but the green is my perfect combination.

Now this is the perfect way to enhance the flavor of these tacos. I found this step by step recipe for Salsa Verde. It's the best I've seen. Definitely deserves a try. You won't regret it especially if you like it hot! :-) FYI, you might have to go to a Latino grocery to get some of the ingredients but, go get them, it's worth it.

Washing It Down

Best ever!

Omg! I don't really like beer as a rule, but I'll drink one of these! Got to have the lime, though. Friends and these simple pleasures for me, it's the perfect hang out or movie night. Doesn't get any better. Bon appetite!
