Vegetarian Mexican fiesta bowl.

Mexican food is one of my favourite types of food to eat. It’s always packed with flavour and is exciting and different! It’s also one of the simplest to cook and can be one of the healthiest if it is prepared and cooked right.

From fajitas, to tacos, to enchiladas, to quesadillas, to MARGARITAS! Mexican food is definitely up there with one of the best foods to eat in the world, and for some reason I can’t say MARGARITAS without getting a bit excited…cause they’re just awesome.

As we all know, I’m all about healthy, nutritious and balanced food with the occasional indulgent treat. This recipe is super healthy and nutritious but makes me feel like I’m having a treat! The combination of the ingredients with a squeeze of fresh lime and a dollop of salsa or guacamole is the ultimate mouthful!

Lets get started…

Ingredients:

  • 1 Wholemeal tortilla
  • ½ Tin sweetcorn
  • ½ Tin black beans
  • ½ Bag microwavable brown rice
  • 1 Handful spinach
  • ¼ Mango
  • 2 Red tomatoes
  • 1 Spring onion
  • Red pepper dressing
  • Low fat cheese
  • Salsa
  • Guacamole
  • Limes

Method:

  1. Use a glass or circular cutter and cut out circles from the wholemeal tortilla. Then press these circles into the bases of a muffin tray and bake them at 180˚ until they are golden and crisp.
  2. Drain the sweet corn and place half of it into a small saucepan with a little butter. Heat this until the corn has heated through and there are some brown crispy bits.
  3. Drain and rinse the black beans and add them to a small saucepan with some olive oil. Heat these until they have warmed through and there are some crispy bits and add some salt and pepper to taste.
  4. Dice the mango, tomatoes and spring onion to equal sizes and toss them in a tablespoon of the red pepper dressing or any other dressing you like.
  5. Microwave the brown rice bag for two minutes on full power and set it aside to cool.
  6. Now we are ready to assemble. In a wide set bowl start to add some of each component into each segment of the bowl so each area has a different part in it. In the centre, add a small dipping dish filled with grated low-fat cheese and get ready for a fiesta in your mouth.

Let me tell you how to eat this…

On top of a mini-toasted tortilla circle, add a couple of spinach leaves and a tiny part of each component, try to fit some of each part on, which is harder than it sounds. Then, add a squeeze of fresh lime juice, and some guacamole or salsa. Then, try and get the whole lot in your mouth…thank me later!

This delicious vegetarian Mexican fiesta bowl is so satisfying to eat because you can make your own mouthful up! Get the kids involved and see who can make the tallest mouthful, and then get ready to see the mess they make!

When all the mini-toasted tortilla circles are gone, I mix everything else together, add some salsa and guacamole and it is the best Mexican messy bowl you will ever have!
