I know when you hear meat loaf you think of a huge lump of hamburger mixed with stuff and formed into a loaf, baked and served up with probably mashed potatoes and a veggie. Well, I call this meat loaf because it is a loaf covered and stuffed with meat.

I’ll tell you what’s in it.

This one is pizza dough, bacon, pepperoni, salami, and cheese.

I also made biscuits covered in the meat and cheese mixture because I did not have enough dough or perhaps flatten the dough enough to use all the meat I cut up.

So I was watching a Guy Fieri show and he went somewhere on the East Coast that served this with Prosciutto. Sorry, traveling to New Jerseyorkshiretown or wherever is out of my budget…as is prosciutto. It is a delicious meat if you have the funds for it, but at my local grocer, it is $5.49 for a pack of 5 thin slices. Um, no thanks.

I did not have precise measurements so I cut up what looked like equal amounts of each meat. The recipe below is for using just enough for the amount of pizza dough (12 oz) in the recipe.

I got a bag of sliced pepperoni (5 oz bag, I used probably 3 oz.), sliced salami (3-4 oz bag), and a big ass pack of thick cut bacon (but I only used 5 pieces of it). I had sliced provolone at home so I didn’t buy any but once I got home I found it was almost gone. CRIKEY! So I added some shredded cheese mix.

Then you mix it all up nice like. Dang, it looks good just like that.

Press out your pizza dough but not too thin to make holes.

Plop the dough on top of the mixture and give it a good press down and flip it over pressing it down a few times.

Lay out the dough like so and feel free to press some mixture into any empty spots.

Fold the sides in like so.

Then roll it up from the bottom up (or the top down if you're naughty)

Like I said, I had more mix than dough, so I popped open a can of Pillsbury biscuits and rolled them in it. I suppose you could pry the biscuits in half and put mix in the middle too, but I didn’t think about that until after.

I started off with them all on this cookie sheet (my sheet pan was dirty from something else I just cooked. Halfway through I saw that the meat was producing a lot of grease so I had to move the big loaf to a loaf pan so none leaked off the side.

Cook the roll for 38 minutes and the biscuits for 13.

Like I said, it produced grease so I laid them on paper towels for a few after pulling from the oven.

Layers of dough, meat, and cheese!!! If it had coffee in it I just might have died and gone to food heaven.

Recipe:

  • 10-12 oz pizza dough or 2 cans of refrigerated biscuits (8 count each)
  • 3 oz diced pepperoni
  • 3 oz diced bacon (4-5 slices of thick cut)
  • 3 oz diced salami
  • 3 oz diced provolone cheese (or any cheese you like. Provolone melts really well) the shredded mix I used was a Mexican style blend

  1. Dice meats and cheeses, mix well.
  2. Spread out dough or separate biscuits.
  3. Roll and press into meat & cheese mixture.
  4. For the dough, lay out flat, fold in sides then roll up jelly-roll style.
  5. For biscuits, separate biscuits, press, and roll into the mixture. You can open the biscuits and stuff some mixture in the center.
  6. Place on sheet pan with a lip, cook at 350°.
  7. Cook roll for 38 minutes.
  8. Cook biscuits for 13 minutes.
