Apple Walnut Chutney Cheeseburger with Bacon
I knew I could make a delicious burger and I always have had success when improvising tasty things. I knew I wanted bacon on my burger, but some creamy spicy sauce. The word chutney popped into my mind and I figured I could look something up.CHUTNEY Ingredients for 4 cups:- 1/2 cup of sugar- 1/2 cup of brown sugar- 1/4 teaspoon of salt- 1/2 tablespoon of crushed red pepper- 1/2 tablespoon of cinnamon- 1/2 a cup of orange juice- 1 tablespoon of minced fresh ginger- About 1/3 of a cup of apple cider vinegar.- 4 cups of small cubed (1/2 inch or less) granny smith apple (Peeled and cored)- 1/2 cup of small diced yellow onion- 1/2 cup of finely chopped walnut - (optional) 1/2 cup of golden raisins
FIRST ADD
The sugar, brown sugar, salt, crushed red pepper, cinnamon, 1/2 a cup of orange juice, minced fresh ginger, and apple cider vinegar together in a large sauce pan.
Bring these ingredients to a boil on medium heat, stirring occasionally. As the first ingredients are brought to a boil, stir, then reduce the heat to medium low
SECOND ADD
The apple and the yellow onion. If you have golden raisins, add them now (I skipped this, as it is not needed and many people don't like them).
Stir often, cooking the fruit stew for 1.5 hours. The stew will begin to thicken. After the apples have lost their opaqueness and are soft, about 1.5 hours should have passed. Remove from heat. DO NOT SCORCH during this hour and a half.
Add the walnuts after the heat is off and mix well.THE SAUCE- 2-3 cups of Mayonnaise- ChutneyI mixed 2 cups of the chutney with 2 cups of mayo for the burgers. If you want it spicier, add extra chutney in the mayo, or lay a small spoonful between the meat/cheese and bacon layer.THE MEATI grated yellow onion into the meat, added steak seasoning, pepper, and a tbsp of chili powder before shaping the patties. Use whatever type of meat you want for your patties, but hand mixing it makes them delicious.THE BURGER- Pepper Jack Cheese meltedon the Cooked Patty- Lettuce- Mayo Chutney- Crisp Bacon (I used Applewood-Smoked)- Toasted bun (basted with bacon-grease before toasting)- Tomato (optional)
From top to bottom:
Toasted Bun, large dollop of mayo chutney, (tomato if desired), lettuce, two strips of bacon, (extra plain chutney for spicy kick, if desired), burger w/ cheese, toasted bun.I served the meal to 8 people and the food was met with an immediate reception of ecstatic gasps. I guess that means it was a success.As I tasted it, the first thing that stood out was the creaminess. It was a lot less chunky and spicy as I had first expected, but the flavor was amazing. I tried it with and without tomato and the burger does not need the extra acid. Left-over chutney was amazing on rice and pork. The cost was worth it 100%.
