Some Yummy Stuff

Hey everyone. This is my first time writing, so I figured I would start out simple by sharing a few of my favorite dessert recipes. As a mom of two I need stuff that is quick and easy. Not to mention a little healthier, so I don't have to feel so bad about eating more than I should 😅 All of these recipes are vegan, but some ingredients can be swapped for the non vegan stuff. (i.e. almond milk for cow milk, agave for honey, etc.)

Instant Avocado Mousse

  • 1 Ripe Avocado
  • 1/2 cup Cacao Powder
  • 1/4 cup Whole Milk or Plain Non-Dairy Milk
  • 1/4 cup Agave Nector, Maple Syrup, Honey, or Cane Sugar
  • 1 tsp Pure Vanilla Extract
  • 1 pch Fine Grain Sea Salt
  • to taste Chocolate Shavings (optional)
  • Whipped Cream (optional)

Combine everything in a blender and blend until smooth. Top with whipped cream and chocolate shavings.

This makes two one cup servings and takes about 5-10 minutes to make. Honestly, however long it takes you to get all the ingredients out and into a blender, and it is that simple.

I preferred using the sugar other than the alternatives because I could taste the cocoa powder over everything, and it was gross, but if you prefer it that way I won't stop you. I also added in a few coffee beans and some frozen strawberries. Non frozen berries are a excellent topper too.

3-Ingredient Gluten Free Vegan Peanut/Almond Butter Banana Cookies

  • 2 Ripe Bananas
  • 1 cup Oats (gluten free, optional)
  • ¼ cup Peanut or Almond Butter
  • 12 Peanuts for garnish (optional)
  • Coconut Shavings (optional)

Preheat the oven to 350 degrees Fahrenheit. Peel bananas and place in bowl. Mash bananas with fork. Then add in the peanut butter and mix well. Once combined add in oats. Spoon out some of the dough and roll into balls, place onto a greased or non-stick pan, and bake 10-12 minutes.

For my own little spin to it I melted some chocolate and once the cookies were cool I dipped them in, sprinkled on some coconut shavings, and placed in the fridge to harden.

Simple Mango & Coconut Chia Seed Pudding

  • 1/2 cup coconut milk
  • 1/2 cup almond milk
  • 2 tablespoons chia seeds
  • 1 tablespoon shredded coconut
  • 3/4 cup fresh mango: chopped and peeled
  • Agave nectar, maple syrup, cane sugar, or honey to taste
  • 1 teaspoon lime zest for garnish (optional)

*Prep Time: 10 mins

*Fridge Time: 24 hours

In a mason jar, or other closed container, add coconut milk and almond milk. Shake the jar until thoroughly combined. Add chia seeds and shredded coconut, shake well. Add chopped mango and refrigerate immediately. Add agave nectar or other sweetener to taste (usually a light squeeze does the trick)

Refrigerate for 5-6 hours and then shake again to distribute the chia seeds.

Refrigerate again for rest of 24 hours or until pudding-like consistency.

Top with extra shredded mango, shredded coconut and 1 teaspoon of lime zest if desired.

I added a teaspoon of vanilla and some dark cocoa powder to make it chocolatey :)

While chia seed pudding is in no way, shape or form a replacement for your traditional pudding, it’s a sweet, less-guilty treat that you can easily make (it takes maybe 5 minutes of active time) from the comfort of your bedroom.
