One of my favorite thing to do is to hand make bread, pizza dough, and PASTA.

Nothing is better than a home cooked meal. Homemade pasta is just unexplainably delicious.

When I found a recipe for egg noodles, my heart exploded into a million pieces.

I remember the first time I ever had handmade egg noodles. My family when to Amish country (as we call it) and I believe I went back to that buffet five times JUST for the noodles. Have you ever eaten noodles from the Amish? If you said no, you need to go right now—seriously drop everything and just go. If you said yes... I think you can understand my excitement here.

I first made this noodle recipe when I was sick. Both my parents work long hours and my mom hardly ever makes homemade meals anymore. When I'm sick, she usually runs to the pie company and gets me their chicken noodle soup. Now this was a day that mom couldn't run over there and I'm a sucker for chicken noodle soup when I'm sick (literally makes everything better). I love to cook, and like I've said before it is one of my favorite things to home make things like pasta. I got my sick butt out of bed and slaved over homemade chicken stock and homemade noodles. That soup (because EVERYTHING was homemade) took forever, but let me tell you, that was the best soup I ever had in my whole life. There was so much love thrown into it. And usually when you make something yourself, you tend to enjoy it, like A LOT more.

So… a couple weeks after I slaved myself even more sick, someone I knew was in a car accident. I was put onto a list to make them a meal and I could not stop thinking about my homemade soup. Now I didn't homemake the broth like I did when I was sick but I did let the delicious flavors marinate for a couple hours before I added the noodles. The family could NOT stop going on about how wonderful the soup was and even more about the noodles. They wanted to know where I got them from…They went crazy when they found out that the noodles were homemade. The exact recipe is below.

This recipe is amazing with chicken noodle soup… which will also be on my page, you're welcome.

This makes about 12-16 servings with chicken soup.

Ingredients:

Refrigerated

  • 2 eggs

Dairy

  • 1 TBSP butter
  • 1/2 cup of milk

Baking & Spices

  • 2 1/2 cups flour
  • 1 pinch salt

Directions:

  1. Place flour and salt in a mixing bowl, form a well in the center, and pour the eggs, butter, milk in the center of the well.
  2. Using your hands, mix the ingredients together, turn dough onto a floured surface, and knead for 5 minutes (until dough is relatively smooth).
  3. Place dough in a bowl and cover with a cloth for 10 minutes.
  4. Place dough on a floured surface and roll out into a rectangle with a thickness of about 1/4". (The dough expands when cooked so if you don't roll it thin enough, you will have very thick noodles.)
  5. Cut dough in half lengthwise using a pizza cutter. Slice dough into strips of 1/4"-1/2" wide.
  6. Lightly sprinkle flour over the strips and gently toss them in your hands to coat.
  7. Let noodles air dry. (Make sure they are not touching because they will stick together.)
  8. Add noodles to your soup (5 minutes to cook).
  9. Serve immediately.

And enjoy your home cooked meal. :)

*Noodles are best when they are not cooked for a long time, as they will soak up liquid and soften.*
