Soup, anyone?

So as a mom and wife it's my duty to cook. Obviously, that is a preconceived idea but I am okay with the chore of cooking because I enjoy it! I have been quite the chef/baker since childhood. I started cooking family dinners at the age of 12 and I have not stopped. I am 20 now, so for the past 8 years I have cooked and baked and I still love the chore. Although sometimes it can be a real chore when I have had a long day.

Today I had the pleasure to try a recipe from the website called Genius Kitchen and the recipe was by "Debber". Let me just say this recipe is to die for. Literally. I would starve a whole week if it meant I got to have this soup again. My husband has had three bowls within 24 hours… and he doesn't even like soup, so he claims.

The nice thing about this recipe is that anyone can make it. You could have beginning level cooking skills and be able to master this Crock Pot style loaded potato soup. This would be great to make if you have a few family members or friends coming over. I am sure it would impress the hell out of my parents so it would probably impress yours too. It is an extra perfect recipe considering fall and winter is right around the corner! *shrieks with excitement*.

The soup only calls for 12 ingredients to make; potatoes, chicken broth, onion, garlic, butter, salt, pepper, cream or half and half, sharp cheddar cheese, chives, sour cream, and bacon. Mmmmmm did someone say bacon? If you are on a diet, this recipe is probably not for you, but that is okay, It can be a cheat meal. I would also like to add that you could probably substitute any kind of cheese.

So basically you cook the bacon and chop it, chop all the vegetables and throw them in there. I would recommend sauteing the garlic and onion in a little bit of bacon grease first. I also added carrot which the recipe does not call for, but it adds a nice color and extra texture to the soup. Add salt, pepper, and the chicken broth. Cook for 4-5 hours and add the unhealthy things (cheese, cream, and sour cream) mix it all in and then mash it all together for a creamier texture. TA-DA you have loaded potato soup. I will add the recipe link below for some better instructions. 11/10 recommend this easy and yummy recipe. Give it a go and let me know how it goes.

I do plan on making this again over the holidays for my family but I plan to step up my game a little bit and make some bread bowls. Seriously this recipe keeps getting better but also more unhealthy… Oops!

The bread bowls call for 5 ingredients; active dry yeast, water, sugar, salt and bread flour. This will be my first time making them by myself, I don't think junior year home economics class counts. Plus my cooking/baking partner burnt them *sigh*. I will add the link for the bread bowls below and will add an update to this post of how mine turns out when I decide to make them.

Anyways, I hope you all get a chance to try this amazing recipe out. It was an amazing recipe and did not fail this family of three. If you try out any of these recipes let me know how they go for you! I would love to hear feedback.
