It's only Tuesday today and I'm having a bad week already! Does anybody else have constant nagging thoughts in their head? My mum passed away almost two years ago now and I'm starting to really struggle without her. When she was alive people walked all over her because she was such a giving and loving person and I feel a lot of the time that she's still being disrespected in death. I suppose the only way I'm going to feel better is to express and share these feelings with the people involved but to top these thoughts off, my kids keep playing a game of who can out scream each other! If anybody has a headache, you can guarantee it is me!

Hey humans, it's time for another recipe haul. I'm going to share a few of my recent favorite experiments along with their macros with you all. You all know that I preach that carbs are your friend, but because I'm on "operation-lose-ten-pounds" I've been tinkering around with the idea of cutting my carbs a bit and upping my protein intake for muscle building. So these meals will have less carbs, more protein, and be significantly lower in calories. I am also trying to make sure these meals are meal-prep friendly for those of you that need to make ahead. This means they should be easy to make large amounts of easy to store, and they should still taste good after they have been reheated!

My Healthy Meal Routine
Dear humans, I always stress that it's SUPER important to enjoy food and eating. A healthy relationship with food is far more important than any amount of weight loss. There is absolutely no point in overthinking about food or being miserable and hungry. That's not the way I would coach anyone to live their lives, after all. That's not a life. I have built a specific food routine that works for me, that takes all the overthinking and guess work out of eating healthy and makes it enjoyable for me. How did I do this? I thought about all the foods I liked and I found ways to keep healthier versions, alternatives, and recreations in my diet. I don't force myself to eat kale salads and drink celery juice because that's not what I like. Did my taste buds change as I tried healthier alternatives? Yes, and I love that! But if I don't want to eat something, well, I'm not going to eat it because I want to be happy during my journey.
Chickpea and Cashew Coconut Curry
Curry is one of the ultimate comfort foods in the world and it's not hard to see why. Its one of the most diverse dishes around because it can be customised and recreated in many different ways. 9 out of 10 times it’s a tikka masala for me because I’m a wimp with spice, but there are SO many different ones out there it's insane!

Oats are an insanely popular base for a lot of people’s breakfast around the world each and every day. Their slow release energy and high fibre content keep us fuelled and filled for longer, preventing unhealthy snacking and binging throughout the day. So it’s no wonder they are so popular!

Easy Empanadas
Wanting to make your own empanadas without having to spend a lot of money? With this recipe you can make 12 empanadas for under $20. Doesn't that sound amazing? To begin this delicious creation you first need to buy the frozen empanada dough, boneless chicken breast, bell peppers, onions and cheese from any grocery store. Any ingredients can be used to stuff your empanadas and if you want to add some spice a little diced jalapeños would be great but do not add the seeds or it will be too spicy.
