Cinnamon Honey Buttercream Icing

Sweet honey cinnamon icing is perfect with any treat.

Recently I have found my love for honey and honey related foods growing so, with my love for baking, it is no surprise that these loves have merged and become one in a glorious combination of honey and baking.

I have gone on a bit of a baking spree recently (so be prepared for a new flood of delicious recipes!) and while on the pursuit of delicious baked goods I once in a while venture out into add ons to these treats, such as icing.

Although I am often on the search for new recipes of all kinds, for some reason I usually stick to my one tried and true icing recipe, but today I decided to be adventurous and I am sure glad that I did! I'm sure my family was glad too because the icing was devoured almost as soon as I made it.

I found that this icing recipe went well with many different kinds of baked goods whether it was cookies, cakes, cupcakes, or even just eating it straight out of the bowl (let's be honest, we all do it from time to time)! I even have a friend that will buy packaged cookies but make homemade icing to put on them. It can make a significant change to the taste of cookies but is still much better than packaged frosting.

I had initially tried this icing with my Miracle Whip Chocolate Cake recipe but in cupcake form. It tasted amazing and honestly only lasted a day or two before my family devoured everything. I know it sounds a little crazy using Miracle Whip in a cake but it's a delicious way to make cake if you are out of eggs or milk and no one will be able to tell the difference. It sure can be a life saver if you are in the mood for a treat but haven't been to the grocery store.

Of course adjustments can be made to the recipe if you find there is too much cinnamon or honey for your taste or perhaps there is not enough. Everyone has different tastes and of course this can be accommodated for with slight adjustments. To be honest, my boyfriend was surprised at how much honey flavor was in the frosting compared to how much in the bottle I had used, which just goes to show that the smallest adjustment can make major impacts on the taste of a recipe.

Ingredients

  • 1 1/4 cup confectioners sugar
  • 1/2 cup butter or margarine
  • 1 tablespoon honey
  • 1/4 teaspoon ground cinnamon

Directions

  1. Pour confection sugar into a medium sized bowl.
  2. Sprinkle ground cinnamon into bowl.
  3. Drizzle honey into bowl.
  4. Place butter or margarine into bowl (works best if softened but NOT microwaved).
  5. Gently blend mixture until light and fluffy, this can either be done by hand, with a whisk or with an electric beater.
  6. When mixture is light and fluffy the frosting is complete. Use it on your favorite treats or be a little bad and just eat it straight from the bowl, that's right, it's that good, you won't be able to resist.
