I don't know about you but I go crazy when I'm sick. I hate not being able to do anything. If you know me, you know chicken noodle soup makes everything better.

Nothing makes me feel better when I'm sick than chicken noodle soup. Now HOMEMADE chicken soup… that warms your entire body and makes you feel like you were never sick to begin with.

If you'd like to hear a couple stories, keep reading (for the sake of my word counts) but if you can't stand it and just want the recipe, scroll down.

I can't help but remember those little cans of soup that my grandma use to heat up and give me whenever I wasn't feeling well. It was probably grandma who started my chicken noodle soup craze.

I first made this chicken noodle soup recipe when I was sick, both my parents work long hours and my mom hardly ever makes homemade meals anymore. When I'm sick, she usually runs to the pie company and gets me their chicken noodle soup. Now this was a day that mom couldn't run over there, and I'm a sucker for chicken noodle soup when I'm sick. (It literally makes everything better.) I love to cook and one of favorite things to make is pasta, especially for chicken noodle soup. I got my sick butt out of bed and slaved over homemade chicken stock and homemade noodles. That soup (because EVERYTHING was homemade) took forever, but let me tell you, that was the best soup I ever had in my whole life. There was so much love thrown into it. And usually when you make something yourself, you tend to enjoy it like, A LOT more.

So… a couple weeks after I slaved myself even more sick, someone I knew was in a car accident, I was put onto a list to make them a meal and I could not stop thinking about my homemade soup. Now I didn't homemake the broth like I did when I was sick but I did let the delicious flavors marinate for a couple hours before I added the noodles. The family could NOT stop going on about how wonderful the soup was and even more about the noodles. They wanted to know where I got them from… They went crazy when they found out that the noodles where homemade.

Now the recipe below tells you to add store bought chicken broth into it, I personally love to make my own broths and the scent that homemade chicken broth give off just fills your house with such a pleasant smell. You know for sure walking into that house that some awesome soup is about to be made.

If you even want to go a couple steps more forward in added as much love as you can into your chicken soup, make those homemade noodles.

Serves 6

INDREGIENTS:

Meat

  • 2 cups chicken

Produce

  • 1/2 tsp dried basil
  • 1 cup carrots
  • 3/4 cup celery
  • 2 garlic gloves
  • 3/4 cup onion
  • 1/2 tsp dried oregano

Dairy

  • 2 1/2 TBSP butter

Canned Goods

  • 9 cups chicken broth

Other

  • Homemade noodles (on my page)
  • or 2 cups of store egg noodles

DIRECTIONS:

In a large pot over medium high heat, melt butter. Cook onions celery and carrots in butter until tender (about 5 minutes) Add garlic and cook for additional minute.

Pour chicken broth and stir in noodles, basil, oregano, poultry seasoning (optional) and dash of salt and pepper.

Bring to a boil, then let simmer for 20 minutes.

Stir in chicken and cook until heated throughly.

Serve immediately.
