Cajun Spiced Meatless Patties

So as I stated, I am going to start doing some meatless meal prep recipes for those of you who don't really like meat or don't want to eat meat for every meal. I recently went out and bought a bunch of cans of beans so I can make veggie stuff. I like tofu but you're only supposed to eat a certain amount of soy and it's also one of the biggest GMO crops out there so I try to steer clear of it unless I'm really craving it or wanting something that mimics fried chicken without the chicken. So this will be the first of three veggie recipes and I hope you guys enjoy them.

I included a simple gravy because I didn't know if the patties were going to be moist or dry so I just added the gravy to make sure I had something in case the patties were dry. You can essentially make these with any type of bean so you can use whatever is in your cabinets if you don't want to use great northern beans. There is also no salt in the patties because the beans themselves are somehow naturally salty.

The things you will need for the patties:

  • 2 cans of great northern beans
  • 1/2 can of sweet kernel corn
  • 1 tsp. of cajun seasoning (adjust to spice tolerance)
  • 1 cup of rice
  1. Mash the beans and the rice together but leave some of the beans whole or partial to give the patties a bit of texture. The rice is a binder to help keep the patties together.
  2. Add in the corn for some sweetness, mix together. This breaks up the saltiness of the beans.
  3. Make 8 patties about the same size, put them on a baking sheet, and put them in the fridge for about 20 minutes to firm up.
  4. At this point you can choose to pan fry them in some coconut oil until they're golden brown on both sides or bake them in the oven at 400 degrees for about 25-30 minutes, flipping them halfway through.

For the gravy, just combine equal parts of butter and flour into a saucepan to make a roux. Once your roux is combined and the flour is cooked off, add in either chicken stock or beef stock. Start with a small amount and just keep adding until you get the consistency you'd like since people like different consistencies. I seasoned it with garlic powder, onion powder, cracked black pepper, and a little bit of paprika. I didn't put any salt in here because a lot of broths have a lot of sodium in it so there was no need for salt to be in the gravy. You can put any seasonings you like in the gravy. The point of the meal preps is you make stuff you like so you'll actually eat it, so season it as you like.

With these patties, I just served with white rice and some carrots that I baked in coconut oil. I was going to serve this with quinoa but was sad when I realized I had none because I used it when I made my slow cooker chicken. You can also use these patties as burgers if you're a vegetarian or vegan if you're thinking about making some burgers. Or if you want to meal prep these for burgers, make them ahead of time and keep them in the fridge but make it in smaller batches because I know good and well that nobody eats burgers every day.
