Best Italian Meatloaf with Roasted Potatoes and Peppers, Paired with Sparkling Cranberry Punch

Very rich and delectable for an intimate Fall Dinner Party!

Italian Meatloaf Recipe

  • 12 oz lean ground chuck
  • 4 oz ground pork or sausage
  • 1 cup fresh soft bread crumbs
  • 1 8 oz can tomato sauce
  • 2 eggs
  • 1 tsp oregano
  • 1/2 tsp basil
  • 1 clove garlic, finely chopped
  • 3/4 cup low fat cottage cheese
  • 1/2 cup shredded mozzarella

Preheat oven to 350 degrees. If you are serving from the pan, grease 8 1/2x 3 5/8 x 2 5/8 inch loaf pan. Or to remove the loaf from the pan to serve, line pan with heavy duty aluminum foil leaving a 4 inch over hang all the way around. Grease the foil.

Combine chuck, pork, bread crumbs, half the tomato sauce, 1 egg, oregano, basil and garlic in a large bowl. Mix well and pack into a prepared pan.

Combine cottage cheese, 1/4 cup mozzarella and remaining egg in a small bowl. Spread over the meat. Top with remaining tomato sauce and mozzarella.

Bake in a preheated oven 350 degrees for one hour. Serve loaf directly from pan or let cool at room temperature until topping is set, about 30 minutes. Lift loaf out of pan using the foil over hangs as handles. Remove load from foil and serve.

Makes 6 servings.

Roasted Potatoes with Peppers Recipe

  • 1 1/2 lbs russet potatoes, paired and sliced lengthwise into quarters.
  • 1 large sweet red pepper, halved, cored, seeded and cut into 8 wedges
  • 1 large sweet green pepper, done the same as the red
  • 4 small onions, halved and cut lengthwise into quarters
  • 4 cloves garlic, chopped
  • 3 tbsp olive oil
  • 1 tsp fresh rosemary or dried
  • 1 1/4 tsp salt
  • 1/4 tsp black pepper
  • Fresh rosemary sprigs, optional

Preheat oven to a hot 400 degrees. Arrange potatoes and peppers alternately in a spoke pattern in a large shallow 12 inch round baking dish or pie plate. Pile onions in the center and scatter garlic over the top. Drizzle the olive oil over the top and sprinkle with rosemary, salt and pepper.

Bake in preheated oven 400 degrees until vegetables a lightly golden and tender about 45 minutes. Garnish with rosemary sprigs, optional.

Makes 4 servings.

**You might want to double this if you are going to serve it as the only side dish.

We put peppers on and in a lot of recipes and that's because of all of the good benefits like vitamins and Beta Keretin. Not to mention that it also makes dishes tastier and they are great for grilling. The advantages of Rosemary

Everyone should have a little rosemary plant in your kitchen. It comes in handy for stews and soups especially, in the fall. Not to mention, it will make your kitchen and your whole house, for that matter smell fresh and festive. But, there are other advantages to this wonderful herb. You can mince it, chop it, dry it. Use it in rubs to marinate meat. To flavor stews and soups you can cut off a tip or sprig at a time. Just place it in your pot of stew then when it is done remove the sprig and you will have flavor like you will not believe right at your fingertips. You can also crush it and reap the advantages of the oil that it yields.

Sparkling Cranberry Punch Recipe

  • 2 quarts cranberry juice cocktail, chilled
  • 1 can, 6 oz, frozen pink lemonade, thawed
  • 1 quart sparkling water, chilled

Mix cranberry juice cocktail and lemonade concentrate in a large punch bowl. Just before serving, pour in sparkling water.

Makes 25 servings, about 1/2 cup each.

This is another fall party recipe but, it does have alcohol in it so, make it responsibly and not for anyone under 21. This is a little more of a party punch, if that's what you are after, as appose to an intimate Dinner Party. This beautiful video I found on You Tube shows how to make it pop!

Plus, cranberries or cranberry juice has been linked to the prevention of urinary tract infections, lowering of blood pressure, prevention of certain kinds of cancer, improved immune function, low in calories and high is Vitamins C, A and K. Even if you wanted to just drop some cranberries in your water bottle when you go jogging or just walking you will still get the nutrients from them being in the water.
