BBQ Chicken Fries

The Ultimate Munchie Satisfier!

If you are looking for a tasty late night meal or party food, this dish is for you! Not only is THIS recipe amazing, but if you feel the need to make any modifications, you absolutely can! The great thing about this dish is you can make it 100% your own. We decided on more of a BBQ taste, but if you wanted more of a tangy flavor you can switch out the BBQ sauce for mustard, or even make it a nacho-supreme style dish. Your options are really endless, which makes this one of my favorites! Now, if your taste buds are begging for this dish, look no further! This recipe is quick and easy, so let's get started!

What you need

  • Frozen fries (or tots, whatever floats your boat)
  • 4 boneless chicken thighs (at room temperature)
  • 1/2 onion (chopped)
  • Shredded mozzarella cheese
  • Shredded cheddar cheese
  • Minced garlic
  • BBQ sauce (Our favorite is Famous Daves Sweet and Sassy sauce)
  • Salt + pepper
  • Olive oil

Time to Cook!

  • Cook frozen fries or tots according to package directions.
  • While fries are cooking, heat a medium to large pan on medium/high heat. Add 1/2 tbsp olive oil per chicken thigh. Preferably, you would want to use a cast iron skillet to get the perfect sear, but if you don't have one that's fine!
  • Pat dry chicken with paper towel. This helps make it crispier.
  • Generously season chicken with salt, pepper, and 1 tbsp of BBQ sauce per chicken thigh.
  • Place chicken in smoking hot pan, reduce heat to medium, cook thoroughly. Set aside. Timing all depends on size of chicken thigh, ours took about 3 minute per side.
  • Once chicken is set aside, remove any burnt bits from the pan. Add onions, garlic, and a little more oil if necessary. Saute onions till translucent. Set aside.
  • After chicken has rested for 5 minutes, cube into medium sized chunks.
  • Place cooked fries in a 9x9 baking dish. Lay chicken and onions evenly on top of fries. Drizzle BBQ sauce over top. Add a layer of Mozzarella cheese with a dash of cheddar over that, and repeat. Broil for 5-10 minutes, until cheese is melted.
  • Once the cheese is melted, let cool for about 5 minutes and ENJOY!

...Yes it is that simple. It all but took less than 30 minutes to complete, which, for my household, is a new record! And let me tell you, these didn't last long either because we DEVOURED them. The chicken is so juicy and tender especially with the BBQ sauce cooked into it. We did decide to grate our onions so they were super fine, however, when we cooked them they became a little burnt and did not have that much flavor. Because of that, I do recommend finely slicing them with a knife. When it comes to the choice of cheese, it really is your personal preference. We chose to layer more mozzarella cheese and just a little bit of cheddar.

This can work for a lot of occasions. If you need a quick potluck meal, family night, or if you just want something quick and easy, especially on a budget, this will work! You can modify it to fit your needs and tastes, so you can make this ten times, without having the same version once!
