3 Filling, Simple, Quick & Easy Meals Under 300 Calories

A list of my favorite healthy meals with few ingredients & fewer calories.

As part of my twelve-day holiday countdown, I want to highlight something new everyday for 12 days that promotes healthy fitness and nutrition habits. I want to help you start the new year right and avoid all that extra winter fluff.

So, here's day 3 of the holiday health countdown: 3 healthy and easy recipes under 300 calories. I wanted to share clean eating recipes that are simple to follow. Especially with so many hardworking parents/students/ people out there. You have to treat yo' self!

Now, if one of your excuses for clean, healthy eating is that you don't know how to make healthy meals, or that you just don't have time... don't worry, I GOT YOU!

I've compiled a list of my go-to meals when I don't have the time or energy as a hardworking mother and/or when sometimes I am just a lazy 23-year-old.

To help you out even more, I've even kept the "list" short, sweet and simple (and hopefully super easy to follow)...so let's get right into it:

Shrimp & Zucchini Stir-Fry [273 Calories]

What you need:

  • Frozen shrimp (1/2 pound)
  • 1 Zucchini
  • Garlic (garlic powder)
  • Salt & pepper
  • 1 tsp Lime juice
  • 1 tbsp Olive oil

Directions:

  1. Cook frozen shrimp in skillet on medium heat (don't season yet, let the water cook out first!)
  2. While shrimp is cooking, cut zucchini into thin slices. (use a slicer or turn zucchini on board vertically and slice carefully)
  3. Drain water from shrimp. Add olive oil, lime juice, salt & pepper to taste, and 1 clove of minced garlic (or garlic powder to taste)
  4. Cook for 1 minute, stirring regularly.
  5. Add sliced zucchini. Cook for about 3 minutes, or until zucchini is soft.

Turkey Taco Salad [275 Calories]

What you need:

  • 4 oz ground lean turkey
  • Cumin
  • Paprika
  • Garlic Powder
  • Salt & pepper
  • Chili powder
  • Cayenne pepper
  • Spinach, romaine, or choice of greens
  • 1/2 Onion
  • 1/2 Bell pepper
  • 1/8 cup shredded cheddar cheese
  • 1/2 tbsp Olive oil

Directions:

  1. Heat skillet on medium, add olive oil
  2. Cook ground turkey in skillet. While cooking, add 1/2 tbsp of: cumin, paprika, chili powder, and garlic powder. Add salt & pepper to taste, and 1 tsp of cayenne pepper.
  3. Dice onion and bell pepper, add when turkey is slightly brown (to keep slight crunch)
  4. Cook meat well (approx. 4-5 minutes) until completely brown.
  5. Let cool and serve over greens with 1/2 tablespoon of taco sauce of your choice and 1/8 cup of shredded cheese. crumble tortilla chips or strips and add about 15 cals. YUM!

Quick Chicken Stir Fry [285 Calories]

What you need:

  • Frozen, prepared stir-fry mix
  • boneless, skinless chicken breast
  • 2 tbsp low-sodium soy sauce
  • salt & pepper
  • 2 tbsp Olive Oil

Directions:

  1. Heat 1 tbsp olive oil in pan over medium heat. Add 1 cup of stir-fry mix (I get the oriental packaged stir-fry mix from Aldi) Stir regularly, to insure it doesn't stick.
  2. Dice one boneless, skinless chicken breast. In separate pan, cook chicken in 1 tbsp olive oil with salt and pepper to taste on medium-high heat until completely cooked through.
  3. Add cooked chicken to stir-fry mix. Add 2 tbsp of low-sodium soy sauce and simmer, covered for about 2 more minutes, stirring occasionally.

I hope these meals gave you inspiration for quick, simple, delicious meals to stick to your goals and satisfy your taste buds. Each caloric measurement is for the amounts listed in the recipes, and each serving size is for 1. You could easily multiply these amounts to feed your family and your friends.
