"Two Spam Recipes"

This recipe has been in my family for forty years. Family surrounded this dinner with iced tea and tireless talk at the end of the day. A hearty, filling meal with plenty of protein to help you push away from the table feeling more than satisfied.

Recipe

  • 1 small onion, minced
  • 6 tbsp margarine or butter
  • 6 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 1/2 cup milk
  • 1 1/2 cup shredded cheddar cheese
  • 6 hard boiled eggs, sliced
  • 2 cup diced, cooked potatoes, peeled
  • 1 large can Spam, 12oz, diced
  • Paprika

Cooking Directions

In sauce pan, sauté onion in the butter until golden. Stir in flour, salt and pepper. Add milk and cook, stirring until thickened. Add one cup of cheese and stir until melted. Remove from heat and pour over remaining ingredients, except paprika. Mix gently but thoroughly. Then put in shallow 2qt. baking dish. Sprinkle with remaining cheese and some paprika. Bake in preheated 400 degree oven 15 to 20 min. until bubbly.

Makes 6 Servings

(Can use ham instead of Spam.)

"Grilled Cheese, Spam, and Cilantro"

Another great favorite of mine. Comfort food at its finest. Have this in front of the fire and some tomato soup. You'll sleep like a baby!

Recipe

  • 1 can of Spam, large
  • 1 small bunch of cilantro
  • 8 slices of american cheese
  • 1 tbsp oil, can be olive or vegetable
  • 2 tbsp butter
  • 8 slices of whole wheat bread

Cooking Directions

You can fry the Spam before hand if you would like. Heat your skillet with the oil and butter, but not too high. Slice your Spam to likeness for your sandwiches. Make your sandwiches with the Spam, cheese, and cilantro, but not too much cilantro, as when the cheese melts the cilantro will run out into the pan. Have a paper towel on a plate ready. Cook them in the pan for at least 3 min. on each side. You will need a good spatula unless you are using a non-stick pan. After they have set for 5 min., then slice any way you like. Bon Appetite!

Now, what to pair with Spam?

Normally, you wouldn't think of pairing alcohol with spam, but, I can tell you, a nice white wine goes very nicely. It's crisp, each sip cleanses your taste buds for the next bite. Choose a dry, but not overly done white wine but light. I think you will be surprised!

Vegetables that Are Good with Spam

For the most part, anything green, you would think, should go well with Spam, right? Not so much! Eggplant, for example, goes great with spam. It compliments the flavor of the Spam with just a touch of its nutty kind of flavor and if you need to you can always drizzle it with a little cheese or olive oil.

Fried green tomatoes are another side dish that goes surprisingly well with Spam. Yes, I know, tomatoes are actually a fruit. Yellow fried squash is yet another vegetable that goes well with Spam and any of these and veggies like them can easily be drizzled with a little cheese sauce or grated!

There are other tasty things you can do with Spam. I found an interesting video on YouTube about grilling and making sushi with Spam. You can also pair it with starchy foods like rice and potatoes. All in all, Spam can be prepared in a lot of different ways in interesting venues. So it's fun to experiment a little bit. One thing that I have found is that other countries use Spam as well. There are more kinds of recipes for Spam than I ever knew was possible.

Don't be afraid to get creative, but always read the label cause Spam can be kind of salty!
