Thanksgiving is just around the corner. I'm sure you're excited to se the relatives that you haven't seen in quite some time, simply getting to spend time with them, reminiscing on old times, memories.

When my family and I get together to celebrate Thanksgiving, we have a contest. A good contest, that is of who makes the best dish, sides, or desserts. Normally, my mother wins with the ham she makes, and I always end up in second with my two cheesecakes. After, we feast upon the magnificent food, we come together to play games, sometimes drink wine, and then take family pictures. We just thank the Lord for giving us another day to spend time with the people we cherish.

If you haven't figured out what you'd like to take to Thanksgiving, or, if you just don't have the time to do anything, my simple and easy cheesecake recipes are your best bet, unless, of course, if you go to the local grocery store and pick up food that has already been cooked or baked. But, what's the fun in that?

Making your own food is a delight. Why? Simply because when you make whatever you choose to cook, and someone takes a bite out of your food that you've prepared, you get to watch as their face lights up with pure joy.

I believe that these two cheesecake recipes I'll share with you today will be a huge hit at your Thanksgiving celebration...

Plain-Jane Cheesecake

  • 2 packages of cream cheese
  • 1 cup of sugar
  • 1 tsp of vanilla extract
  • 1 pie crust

All you have to do is blend all of the ingredients together. Then you pour it into a pie crust, smooth it out how you'd like, and then place the cheesecake into the refrigerator for however long you'd like.

Pumpkin Pie Cheesecake

  • 2 packages of cream cheese
  • 1 cup pumpkin, canned
  • 1 cup whipped cream
  • 1 and a half cup sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 pie crust

Put cream cheese and pumpkin into the mixer and blend well. Add the pumpkin pie spice, vanilla, and sugar and mix together. Put the whipped cream in and mix well, also. Finally, pour it into the pie crust and spread it however you'd like. Place into the refrigerator for however long suits you.

Also, to add something else to it, you could spread cool whip over it and sprinkle a little bit of cinnamon over the top of the cool whip to give it a bit of decoration.
