Only recently have I realized the awesomeness that comes with owning a crock pot, and as such, I've barely just begun to explore awesome easy crock pot recipes online. Over the months, I found great slow cooker soup recipes, good recipes involving slow cooked pork, and much, much more.

One of the best chicken crock pot recipes I've found was a simple recipe for white chicken chili — a creamy, tasty chili that's more buttery than saucy. Now, I'm going to dedicate a whole article to teach you how to make white chicken chili in a crock pot.

Before We Start...

Before I can teach you how to make white chicken chili in a crock pot, you're going to need to get a quality crock pot of your own. For this particular recipe, you will need a slow cooker capable of handling four quarts of food in it.

You also will need the following ingredients handy:

  • 1.25lb boneless, skinless chicken breast
  • 2 (15oz) cans of white navy beans
  • 1 (15oz) can white corn
  • 1 envelope taco seasoning
  • 1 (4.5oz) can of chopped green chilis
  • 1 (14oz) can chicken broth
  • 1 (10.75oz) can of cream of chicken soup (Campbell's works well!)

Got all those ingredients ready? Great. Now, let's learn how to make white chicken chili in a crock pot.

Here's how to make white chicken chili in a crock pot, step by step.

  1. The first three ingredients are really just ready to go as-is. So, add the beans, chicken, and corn to the crock pot immediately.
  2. However, you will need to prep the rest of them before they get placed in the cooker. Even with the laziest of crock pot recipes, you can't really get away with not mixing things up a bit. So, once the corn, beans, and chicken are in the pot, you'll need to whip out a large bowl.
  3. Mix the chicken broth, condensed cream of chicken, taco seasoning, and chilis together. Ideally, the consistency will be fairly even spread once you're done mixing.
  4. Pour that mixture over the chicken. Using a ladle can help.
  5. Close the lid of the crock pot, and cook it on low for eight to ten hours. Just set it and forget it.
  6. Once you're ready to serve it, use a spoon to break apart the chicken — and give the mixture a stir. Place the chili into bowls and serve.

But wait, there's more! You can also upgrade this recipe by adding a little bit of sour cream, some cheese, or even some extra hot sauce to the mix. This adds a bit of a buttery, creamier texture and taste.
