6 Quick, Easy, and Healthy Breakfast Ideas

Below are some of my favourite breakfast recipes! I hope you enjoy.

Chocolate Banana Smoothie

This is my absolute favourite smoothie!

Ingredients:

  • 1 cup unsweetened almond milk
  • 1/2 a regular sized banana
  • 1 cup spinach (optional)
  • 1 1/2 tbsp of natural peanut butter
  • 1 scoop of chocolate protein powder (I use Shaklee, a natural supplement)
  • Ice

Directions:

Add 1 cup unsweetened almond milk, 1/2 a regular sized banana, 1 cup of spinach (optional), 1 1/2 tbsp of natural peanut butter, 1 scoop of chocolate protein powder to your blender.

Blend and add ice to desired consistency!

Greek Yogurt Parfait

Ingredients:

  • 1/2 cup to 1 cup of Presidents Choice vanilla greek yogurt
  • 1/2 cup to 1 cup of fresh fruit (strawberries, blackberries, blueberries, raspberries)
  • Small handful of almonds or low-fat granola

Directions:

  1. Add 1/2 cup to 1 cup of Presidents Choice vanilla greek yogurt (depending on how much you want to eat) into a bowl with 1/2 cup to 1 cup of fresh fruit (strawberries, blackberries, blueberries, raspberries, again your preference!)
  2. I add a small handful of almonds, but low fat granola is also a possibility.
  3. Mix and enjoy!

Egg White Omelette

Ingredients:

  • 1 egg
  • 2 egg whites
  • Chopped up vegetables
  • Salt and pepper
  • 1 Piece of the bread of your choice
  • 1 piece of the meat of your choice

Directions:

  1. Mix 1 egg, 2 egg whites and depending on time any vegetables you choose. (Onion, spinach, peppers, celery). I usually just add a handful of spinach to be quick! Salt and pepper as to what you desire!
  2. While the omelette is cooking I put one piece of rye bread in the toaster and I also cook a slice of turkey bacon in the microwave or on the stove. (You may have a different preference that you like to eat with eggs!)
  3. And there you have it—an egg omelette with toast and bacon, super easy and fast!

Smoothie Bowl

This is another one of my favourites that isn't just restricted to breakfast. It is a great snack when you are craving something sweet but don't want to feel the guilt!

Ingredients:

  • Unsweetened almond milk
  • Natural peanut butter
  • 1/2 a regular sized frozen banana
  • Chocolate protein powder
  • Mini chocolate chips
  • Fresh banana slices
  • Peanuts or low fat granola

Directions:

  1. Add 1/2 cup of unsweetened almond milk, 1 1/2 tbsp of natural peanut butter, 1/2 of a frozen regular sized banana, 1 scoop of chocolate protein powder (Once again I use Shaklee!) into your blender.
  2. Blend and add ice to desired consistency!
  3. Sprinkle mini chocolate chips, fresh sliced banana, and peanuts or granola on top!

Breakfast Wrap

Ingredients:

  • 1 egg
  • 2 egg whites
  • Chopped up vegetables
  • Salt and pepper
  • 1 Whole wheat wrap
  • Dressing (optional)
  • Avocado (optional)

Directions:

  1. Mix 1 egg with 2 egg whites and some vegetables. (Onion, spinach, celery, peppers). Salt and pepper as to what you desire.
  2. Scramble the eggs while cooking so that they fit into the wrap.
  3. Once fully cooked place the egg onto the wrap (I use whole wheat) and add the dressing of your choice. (I add a bit of salsa!) You can also add some avocado if you desire.

Enjoy!

Mini Egg Cups

These mini egg cups are great if you are in a pinch. They can be made days in advance and stored in the fridge for on the go!

Ingredients:

  • Muffin tin
  • 6 eggs
  • 1/4 cup milk
  • Salt and pepper
  • Chopped up peppers and spinach (small pieces)
  • 1/4 cup shredded cheese

Directions:

  1. Preheat oven to 375 degrees F and spray the muffin tins.
  2. Mix eggs and milk together, then add salt and pepper to what you desire.
  3. Slice the peppers and spinach into tiny pieces, then shred the cheese.
  4. Add the peppers, spinach, and cheese to the egg and milk mixture.
  5. Fill the muffins tins up 3/4 full and bake for 20-25 minutes. (Until mixture is no longer runny).
  6. Let the egg cups cool and store the extras in a container in the fridge.
